类胡萝卜素是自然界中分布*广的色素，颜色从黄色到红色不等，由植物和光合微生物合成。类胡萝卜素是从四萜 （C40） 中提取的 40 种碳高度不饱和烃，分为两类：**类是胡萝卜素，仅含有碳和氢原子（例如α-胡萝卜素、β-胡萝卜素、γ-胡萝卜素、八氢番茄红素和番茄红素），**组是叶黄素，其分子结构中含有碳、氢和氧。已鉴定出1000多种类胡萝卜素。

只有植物、藻类和某些种类的真菌和细菌才能合成必须在动物饮食中提供的类胡萝卜素，因为它们是脊椎动物健康和发育的重要物质。类胡萝卜素被认为可以降低疾病风险，尤其是心血管疾病、某些癌症和眼部疾病。在这方面研究*多的类胡萝卜素是虾青素、角黄素、叶黄素、玉米黄质、β-胡萝卜素和番茄红素。类胡萝卜素的有益作用是由于它们通过与自由基（包括单线态氧和过氧自由基）反应而发挥抗氧化剂的作用。

类胡萝卜素因其无处不在、功能不同、性质特殊等特点，是化学、生物化学、生物学、医学、物理学等跨学科研究的主题。对食品和生物样品中的类胡萝卜素进行有效定量是必要的。

可根据要求提供大量类胡萝卜素，包括各种（Z）-异构体、类胡萝卜素、立体异构体和酯类。

类胡萝卜素是通过从天然来源提取或通过化学合成制备的。样品在密封的安瓿瓶中，在氮气下提供，以确保稳定性。通常，纯度（HPLC，%面积）≥95%。

只要有可能，它们就以结晶形式供应，但（E/Z）-八氢番茄红素和（E/Z）-六氢番茄红素除外，它们在环境温度下是油状的。所有化合物均经过充分表征，分析数据（HPLC、紫外/可见光谱）作为数据表，以及**数据表（SDS或MSDS）随样品一起提供。
